Some days your core beliefs get shaken. Last week, I had one of those days.

After four successful days of eliminating my food sensitivities — and losing 3.8 pounds of inflammation — I had a planned carb refeed day. I did all the things on my protocol right:

  • Got up and watched the sunrise.
  • Ate within my first waking hour.
  • Hit my 30g protein target early.
  • Soaked up natural vitamin D.
  • Even got in my infrared sauna session.

Sure, my carbs were higher — that’s expected on a refeed day — and I lost track of time, so my eating window went a bit longer than planned. But I still went to bed thinking, “That was a productive day.”

So imagine my shock the next morning when the scale flashed 188+. I don’t even remember the decimal point — probably because I refused to believe it. A minimum gain of 0.6 lbs overnight.

Instantly, the self-doubt kicked in.
“Your food sensitivity idea is far-fetched anyway. No one really believes you. The trend was bound to end. Coincidence. You’re a fraud.”

During my sunrise viewing, I asked myself: “Am I so blinded by my own hubris that I can’t admit when I’m WRONG?”

I mentally replayed my meals:

  • Breakfast – Steel-cut oats with almond milk. Oats aren’t on my sensitivity list, and almond milk is safe for me.
  • Lunch – Ribeye, three baby carrots, mashed cauliflower. Hmm… I’ve had issues with cauliflower before.
  • Tea – Tried a new one. Could it be that?
  • Dinner – Hamburger with bacon, no bun. Safe… except I did have pickles. And my hair sensitivity test flagged probiotic bacteria. Did these pickles have added lactobacillus? That seemed far-fetched.

Then I noticed — I was burping a lot and had some reflux. Salty burps. Electrolytes maybe? Could I have developed a sensitivity to them?

Or… maybe I was just wrong.
I could already hear the group comments: “Too many calories! Of course you gained!” or “Your weight fluctuates daily — are you stupid?”

Still, I started checking. Pickle ingredients? Just salt and water… until I almost missed the end of the list: Calcium Chloride.

Seriously? My hair sensitivity test flagged that. DUH moment.

But then… wait. Calcium carbonate on my list is not the same as what’s in pickles. I’d just tossed perfectly good pickles for no reason.

So, back through the my menu again.

And that’s when it hit me — something simple, obvious, and in my face: the ribeye had been from a restaurant… and the mushroom topping was sautéed in butter.

When your test says dairy is a problem… yep, it’s still a problem. 😅
